Kala Masala is the signature spice mix of southern Khandesh and gets its name from its blackish colour which is a result of dark roasting of ingredients, which include a high proportion of dark spices like cloves and pepper. Kala Masala is also unique as it contains dark roasted coconuts too, which gives the food a distinct smoky flavour.
